Cooking core temperature log

A cooking core temperature log records the temperature at the centre of cooked food, measured with a probe thermometer. Cafés, food trucks and small restaurants that cook meat, poultry, eggs or ready meals keep it. You measure each batch, or a sample of batches, as often as your HACCP plan sets.

What the law requires

Regulation (EC) No 852/2004, Article 5 requires a business to identify its critical control points, such as cooking, and to set critical limits, monitoring, corrective actions and records that fit its size. Annex II, Chapter IX requires food to be protected at every stage against contamination that could make it harmful to health. In the UK, the Food Standards Agency pack Safer food, better business has the same kind of cooking checks. The core temperature limit and how often you measure come from your own HACCP plan and the national guide.

Write the core temperature limit from your HACCP plan at the top of the sheet. It depends on the food and on the rules in your country.

How to fill it in, in 5 steps

  1. 1Write the date, the cooking equipment and the core temperature limit from your HACCP plan for each type of food at the top of the sheet.
  2. 2At the end of cooking, push a clean, disinfected probe into the thickest part of the food, away from bone, and wait for a steady reading.
  3. 3Write the time, the food, the batch, the measured core temperature and your initials in one row for each check.
  4. 4If the core temperature is below the limit, keep cooking and measure again, then record both readings and the action in the corrective action log.
  5. 5Sign the sheet at the end of the day, have the manager check it, and keep it in the HACCP folder.

Easier in EZLineGo: cooking is a control point, and you record the measured value together with the limit.

Questions

What core temperature should cooked food reach?

Many HACCP plans use 75 °C at the core, or a lower temperature held for a set time, such as 70 °C for 2 minutes. Use the limit in your own plan for each type of food.

How do I check the core temperature of food?

Push a clean, disinfected probe thermometer into the thickest part of the food, away from bone, and wait until the reading is steady. Check the probe regularly in iced water and in boiling water.

Do I need to record every cooking temperature?

Your HACCP plan decides whether you record every batch or a sample, for example the first batch of each product each day. You can keep the same log in the EZLineGo app on your phone and show it as a PDF at an inspection.

How long do you keep the logs?

As long as your HACCP plan and the rules in your country require. Regulation (EC) No 852/2004, Article 5, requires documents and records that fit the nature and size of the business.

The templates help you keep records. They do not replace your own HACCP plan.

On your phone instead of paper

In EZLineGo, cleaning, temperatures, deliveries, health records and training are in one place, and at an inspection you show them as a PDF.
