Water and wastewater tank log (food truck)

A water and wastewater tank log records each time the tanks of a food truck or other mobile unit are emptied, cleaned and disinfected. Food trucks, catering trailers and market stalls with their own tanks keep it. You fill in a row every time you empty, clean or refill a tank.

What the law requires

Regulation (EC) No 852/2004, Annex II, Chapter III sets the rules for mobile sales vehicles and temporary premises, including an adequate supply of hot or cold drinking water and the hygienic disposal of liquid waste. Chapter VII requires an adequate supply of drinking water, to be used wherever it is needed to keep food from being contaminated. In the UK, the Food Standards Agency pack Safer food, better business asks for the same kind of cleaning records. How often you clean and disinfect the tanks and which product you use come from your own HACCP plan and the national guide.

Record every time a tank is emptied, cleaned or disinfected, with the product used.

How to fill it in, in 5 steps

  1. 1Write the vehicle registration, the size of each tank and the cleaning and disinfection product with its dilution at the top of the sheet.
  2. 2Empty the wastewater tank and refill the drinking water tank at the times set in your HACCP plan, and clean and disinfect both at the planned interval.
  3. 3Write the date, the tank, what was done (emptied, cleaned, disinfected or refilled), the product used and where the water came from.
  4. 4If the water looks, smells or tastes wrong, stop using it for food, empty and disinfect the tank, and record it in the corrective action log.
  5. 5Sign each row, keep receipts for water filling or wastewater disposal with the sheet, and file it in the HACCP folder in the vehicle.

Questions

How often should I clean the water tank in a food truck?

There is no single EU interval. Many operators clean and disinfect the fresh water tank on a fixed schedule and always after the truck has been out of use, and the HACCP plan sets the exact interval.

Where can a food truck empty its wastewater?

Only at a disposal point allowed by the local authority or the site operator, never into a street drain. Write the place in the log and keep any receipt.

What water can I use in a food truck?

Use drinking water from a safe supply for food, for washing hands and for cleaning equipment that touches food.

How long do you keep the logs?

As long as your HACCP plan and the rules in your country require. Regulation (EC) No 852/2004, Article 5, requires documents and records that fit the nature and size of the business.

The templates help you keep records. They do not replace your own HACCP plan.
