Hot holding temperature log

A hot holding temperature log records the core temperature of food kept hot at the counter or in a bain-marie. Snack bars, food trucks, canteens and small restaurants that serve hot food from a display keep it. Staff measure each dish at the start of service and then every 30 minutes.

What the law requires

Regulation (EC) No 852/2004, Annex II, Chapter IX says food that can support the growth of harmful bacteria must not be kept at temperatures that may cause a risk to health. Article 5 requires HACCP procedures with critical limits, monitoring, corrective actions and records that fit the size of the business. In the UK, the Food Standards Agency pack Safer food, better business has the same kind of hot holding checks. The minimum temperature and how often you measure come from your own HACCP plan and the national guide.

Write the minimum hot holding temperature from your HACCP plan at the top of the sheet. It depends on the rules in your country.

How to fill it in, in 5 steps

  1. 1Write the date, the counter or unit, and the minimum hot holding temperature from your HACCP plan at the top of the sheet.
  2. 2Measure the core temperature of each dish with a clean, disinfected probe at the start of service and then every 30 minutes.
  3. 3Write the time, the dish, the measured temperature and your initials in one row for each check you make.
  4. 4If a dish is below the limit, reheat it or throw it away, as your HACCP plan says, and record what you did in the corrective action log.
  5. 5At the end of service, sign the sheet, have the manager check it, and file it in the HACCP folder.

Easier in EZLineGo: hot holding is a control point, and you record the measured value together with the limit.

Questions

What temperature should hot food be held at?

Many HACCP plans set 63 °C or hotter as the minimum for hot holding. Use the limit written in your own plan, as the rules differ by country.

How often should I check hot holding temperatures?

A common practice is to measure each dish at the start of service and then every 30 minutes until service ends. Your HACCP plan sets the exact frequency. You can keep the same log in the EZLineGo app on your phone and show it as a PDF at an inspection.

What should I do if hot food drops below the limit?

Reheat it thoroughly or throw it away, as your HACCP plan says, and do not reheat the same food more than once. Record what you did in the corrective action log.

How long do you keep the logs?

As long as your HACCP plan and the rules in your country require. Regulation (EC) No 852/2004, Article 5, requires documents and records that fit the nature and size of the business.

The templates help you keep records. They do not replace your own HACCP plan.

On your phone instead of paper

In EZLineGo, cleaning, temperatures, deliveries, health records and training are in one place, and at an inspection you show them as a PDF.
